Banana Coconut Muffins

Make a double batch of these protein-packed muffins to take for a quick breakfast on-the-go, snack, or something sweet!

Ingredients
  

  • 2 Bananas Very Ripe
  • 1 Egg
  • 1 Cup Unsweetened Almond Milk
  • 1/4 Cup Sweetener (Honey or Maple Syrup)
  • 1 Tsp Cinnamon + additional for topping
  • 1 Tsp Vanilla Extract
  • 2 Cups Kodiak Power Cakes Mix-Buttermilk
  • Unsweetened Coconut Oil (optional)
  • Optional mix-ins: chopped nuts, chocolate chips, cacao nibs, etc.

Instructions
 

  • Preheat the oven to 350 degrees.
  • Spray a muffin tin with cooking spray.
  • In a bowl, mash bananas. Add eggs, almond milk, sweetener, and whisk until smooth.
  • Add pancake mix, cinnamon, and stir.
  • Fold in optional mix-ins.
  • Divide batter between 12 muffins.
  • In a small bowl, add coconut flakes, coconut oil, and cinnamon and toss. Sprinkle coconut mixture over muffins.
  • Bake for 18 to 22 minutes.
