Easy Pickled Red Onions

Michelle Lockhart
The condiment that you should always have on hand! Pickled red onions are great with eggs, salads, sandwiches, burritos, buddha bowls, avocado toast, and so much more! It's quick, it's versatile and it will be a fridge staple item!

Ingredients

  • Red Onions
  • 1 part Vinegar white distilled, apple cider vinegar
  • 1 part Water
  • 1 big pinch salt

Instructions

  • Thinly slice your red onion(s) and add them to a heat proof jar.
  • On the stove top, add equal parts water and vinegar, ensuring you have enough to cover your onions. Bring mixture to a boil.
  • Pour over onions and let sit for at least 2 hours. The longer the period of time, the deeper pink the onions will get.
  • Store in fridge and use on everything.

Notes

You can use different vinegars to achieve different flavors. A personal favorite is half white distilled vinegar and half apple cider vinegar.
