Lentil Dal Tadka

The lentil is a protein-packed, lens-shaped legume that is a great pantry staple to have on hand. This traditional Indian dish is packed with a lot of spices and when paired with rice, is a complete protein. For this recipe, green lentils were used however other varieties can be used but may alter cooking times.

Ingredients
  

  • 1 cup lentils red is recommended
  • 2 cups water
  • 1 tsp turmeric
  • 2 tbsp ghee or avocado oil
  • 1 tbsp cumin seeds or 1.5 tsp ground cumin
  • 1/2 yellow onion, cut into strips
  • 1 tsp garam masala
  • 1 tsp paprika

Instructions
 

  • In a saucepan, combine lentils and water and bring to a boil. Cook until lentils have broken down to your desired tenderness about 10-15 minutes.
  • Preheat ghee or oil in separate pan over medium heat. Add turmeric, garam masala, cumin seeds, and paprika and toast until fragrant, being careful not to burn them (90 seconds). Add onion slices and cook until just starting to brown, 3-5 minutes.
  • Add the spice and onion mixture to lentils, season to taste with salt and black pepper. Serve over rice.
