Preheat the oven to 350 degrees.
Spray a muffin tin with cooking spray.
In a bowl, mash bananas. Add eggs, almond milk, sweetener, and whisk until smooth.
Add pancake mix, cinnamon, and stir.
Fold in optional mix-ins.
Divide batter between 12 muffins.
In a small bowl, add coconut flakes, coconut oil, and cinnamon and toss. Sprinkle coconut mixture over muffins.
Bake for 18 to 22 minutes.
